Just read that some top pitmasters only use salt and pepper on their brisket

I was looking at an old interview with a guy from Lockhart, Texas, and he said his family's joint has never used anything but salt and black pepper for over 50 years. I always figured the fancy rubs with garlic and paprika were needed for good bark. Do you think simple is actually better, or are you team complex rub?

Agree completely, flavor is everything. Plain stuff just feels like a waste of time. Life's too short for boring.
