Hit 500 briskets smoked on my offset last weekend and that felt huge because I totally butchered my first one 3 years ago
I kept track in a notebook since day one and hitting that number made me realize how much I actually learned from all those rubbery flats and overcooked points along the way anyone else keep a count or just wing it?

Did you ever try to 'fix' a ruined brisket by drowning it in sauce and calling it 'pulled beef'? I definitely did that with my first one, it was basically a sad, dry pile of shreds. My notebook is more like a crime scene log now, filled with timestamps of me cursing at the smoker while the fire goes out. I figure counting them is just a way to remind myself I've paid my dues in charcoal.
