Read an article once about a woodworker who had to use hide glue for a whole dining set because the client wanted it "historically correct"... even though the house had radiator heat that would dry it out and fail in a few years. Sometimes the idea in their head matters more than the thing actually working where it'll live.

Honestly can't believe a scale made that big of a difference for you. My measuring cups have always worked fine for cookies, just gotta fluff the flour first. Seems like extra work to weigh everything when a scoop does the trick.

Honestly, the whole thing feels like a racket. I fell for it too, buying a heavy pan that was supposed to fix everything. My bread still sticks sometimes. Blake_martinez has a point about the baking sheet trick, that's just basic oven knowledge. A fancy pan won't teach you how your own oven works. The real skill is learning to work with what you've got, not buying a magic fix. Spending that much money on a pan is only worth it if you bake constantly, and even then, maybe not.
