I finally checked on that fermented hot sauce from summer

I started it when the days were still long and forgot about it in the cellar. All that waiting gave the flavors a deep and complex taste, unlike anything store-bought. What's the longest you've let something ferment before trying it?

Totally get that "forgot about it" thing. It's funny how the best stuff happens when we just leave things alone. I've found that with pickles, too.

Read an article once about how ancient people discovered fermentation basically by forgetting food in jars. The whole "leave it alone" method is how we got pickles, beer, all that good stuff. Sometimes not messing with things is the smartest move.
