Swapped my stick-burner for a pellet grill last weekend in Austin and actually liked the brisket better

I always thought pellets were cheating but after fighting with fire management for 8 hours on a 130 degree day I tried a friends Camp Chef and the smoke ring was way more even than I expected so has anyone else made the switch and regretted it or not?

Did you ever notice how the same thing happens with pretty much anything we're told is the "right way" to do something? It's like when everyone said you had to grind your own coffee beans or you weren't a real coffee drinker, but then you try a good pre-ground and it's totally fine. The gatekeeping around fire management almost made me give up on brisket altogether, but then I realized that a consistent temp from pellets lets me actually hang out with people instead of babysitting a firebox. Sometimes the "shortcut" is just a smarter way to get the same result. It's like how electric cars used to be seen as not real cars but now they're faster than most gas ones.

You know my buddy Dave? He spent like three years perfecting his offset only to sell it and buy a Traeger after he fell asleep watching the game and his brisket dropped to 180. Said the pellet one came out better and he actually got to finish the fourth quarter.
