Finally broke 200 briskets sold in a day at my little joint in Nashville
Been chasing that number for about a year, and it hit me by surprise during a random Tuesday lunch rush. Has anyone else had a milestone sneak up on them like that?

So here's what I learned hitting that same wall at my own spot - you gotta prep for the volume you WANT, not the volume you have. I started cold smoking extra brisket the night before and holding them in a warmer, that way when a random Tuesday pops off you're not scrambling. Also tracking your hourly sales patterns helps, because once you see that 11:30 rush building you can pull the trigger on firing up that backup smoker. It's those small adjustments that turn a surprise into something you can REPEAT.
