Finally got my sourdough starter right after 3 failed batches

I was in my tiny apartment kitchen in Denver at 2am feeding the thing again and I guess the temp finally hit that sweet spot. It doubled in 6 hours flat and I actually got a good oven spring on my first loaf this morning. Anyone else struggle with keeping a starter alive in a cold climate?

@claire992 Actually you don't have to get up at 2am to feed a starter. That's one of those things people say to make it sound way harder than it is. A lot of us just keep our starter in the fridge and feed it once a week. If you're making bread on a Saturday, you take it out Friday morning, feed it once or twice, and it's ready by Saturday morning. No midnight alarms needed. The whole waking up at weird hours thing is from people who keep their starter on the counter and follow a strict schedule, but refrigerating it changes everything. Your mileage may vary but I've been doing it this way for years with no problems.
