A quick warning about yeast storage after my bread disaster
I had to choose between keeping my active dry yeast in the pantry or moving it to the fridge. I left it in the warm pantry for about 3 weeks, thinking it was fine. Yesterday, I tried to make my standard sandwich loaf and the dough just didn't rise at all, even after 2 hours. I checked the packet and realized the heat from my oven had killed it. I had to throw out the whole batch of dough. What's your go-to method for keeping yeast fresh for longer?

Actually I see it totally different, @elizabeth102. My yeast was just taking a well-deserved nap! Sometimes it needs a little extra time to wake up and get going. I've had way better luck just being patient and keeping it warm. Calling it retired feels like giving up too soon. That stuff can surprise you if you just wait a bit longer.

Funny how we all have our own yeast stories. Used to be the first one to declare mine dead too. But watching a batch come back to life after an hour of just sitting in a warm spot totally changed my mind. Now I just give it way more time than the package says. That extra patience usually pays off.
