Update: I read that air fryers can actually LOWER the vitamin content in some veggies
I was looking at a food science site from a university and it said cooking broccoli in an air fryer can cut vitamin C by over 20% compared to steaming. I always thought it was just a faster oven, but now I'm rethinking my whole veggie side dish game. Does anyone have tips for keeping things healthy while still getting that crispy texture?

Yeah that "cut vitamin C by over 20%" line got me looking into it last month. I read a whole article about how high heat and longer cook times break down certain vitamins. So maybe the issue is we're just cooking the veggies too long in there trying to get them crispy. What if you just do a quick steam first, then finish in the air fryer for a minute? You'd still get some crunch without nuking all the good stuff.
