What's your favorite one-pot meal for when you're moving between countries every few weeks?
I've been living out of Airbnbs in Central America and the kitchens always have different pots. I found a lentil stew that only needs one pot and basic spices. But sometimes lentils are hard to find. Do you have other ideas that use common ingredients?

Have you tried a one pot pasta with canned tomatoes and any veggies on hand? I've been in that same spot with unpredictable kitchens. My fallback is a simple rice and bean dish, just cook rice with onion and mix in canned beans. It uses stuff you can find in almost any store.
Honestly, Tyler's rice and bean idea is solid. You can really build on that. Toss in a chopped bell pepper or carrot while the rice cooks for extra flavor.
