Hot take: I was dead wrong about MSG in my kitchen for years

Used to swear I could taste that 'chemical' flavor in Chinese takeout until I tried a pinch in my chicken stock last Tuesday. Has anyone else had a total flip on an ingredient they thought they hated?

People overthink it" - thats rich coming from a guy whose last post was a 3 paragraph rant about organic vs non organic celery. But yeah you're totally right. I used to be one of those people who'd side eye MSG like it was gonna give me a headache and night terrors. Then I actually tried cooking with it and realized I was basically just scared of salt's edgy cousin. Now I keep a shaker of it next to my regular salt and pepper like some kind of kitchen gremlin. The irony is I've been drinking soy sauce and eating Doritos my whole life without batting an eye, but a pure crystal of the same stuff? Oh no, that's where I draw the line. We're all just walking contradictions who need to chill about food additives.
