Stop selling case-ready pork as "dry aged" at the counter on 9th, I watched a guy pay $18/lb last Saturday
Dry aging needs a minimum of 14 days in a temp and humidity controlled case, and that pork came out of a vac seal 20 minutes before he rang it up, so if you're labeling it that way you're either lying or you don't know what the words mean.
It's not just about getting old either. People act like aging is some smooth steady line going down but its really more like a series of sudden drops. You stay the same for years then one day you wake up and your knees hurt for no reason or you cant read your phone without holding it a mile away. The weird part nobody mentions is how it messes with your sense of time. Ten years ago feels like last week and last week feels like a blur. So when people talk about aging like its just wrinkles and gray hair theyre missing the whole head trip part of it.
