I laughed at the guy using a $15 boning knife - now I eat my words

Been breaking down primals for 8 years with a $200 Wusthof but tried that cheap Dexter at a shop demo last Tuesday and it held an edge through 3 whole hogs. Anyone else find a random budget knife that just works better than the expensive stuff?

Buddy of mine bought a $12 Kiwi knife off Amazon just to mess around with. That thing has been his go to for trimming briskets for two years now. Still sharp as hell and he barely touches his fancy Japanese stuff anymore.
