Hit 500 whole beef tenderloins trimmed this morning and it got me thinking

I've been running my shop for about 8 years now and this morning I counted back through my order sheets. Turns out I've trimmed exactly 500 whole beef tenderloins since I started keeping records in 2017. That's a lot of silver skin and chain meat... never really thought about it until I hit that number. Each one takes me about 12 minutes if I'm moving steady. I'm wondering if anyone else keeps count of that kind of thing or if it's just me being weird about tracking my work?

Keepin' count is what separates the guys who care from the ones just punchin' a clock. If you don't track your work you're just guessing at your own numbers.

500 whole tenderloins? That's like... a lot of dead cows. You counting them is the weird part honestly. I barely remember what I trimmed yesterday let alone the last 8 years. But hey whatever keeps you sane behind the counter man. At least you can flex on the new guys now.
