Rant: Mortar dried too fast on a job in Phoenix last July
I was laying brick on a retaining wall and the sun just BAKED my mortar before I could even tap the brick into place. Had to soak everything down with a hose and mix in some retarder to buy another 10 minutes.

That thing about the sun baking your mortar, man, I remember helping my cousin on a walkway in Tucson a few years back and we had the same problem. We ended up mixing in a little bit of dish soap, no joke, someone told us it slows down the set time. I mean, it kinda worked but the mortar looked a bit off color and I've never tried it since.
