Spent 14 months chasing a temp problem that turned out to be one gasket
Last spring I noticed my brisket flat was drying out on long cooks even though the pit held steady at 225. I swapped thermometers, sealed every door with new felt, and even rebuilt the firebox twice over 14 months trying to fix a leak I was sure was in the chamber. Turned out the gasket behind the temp probe port was shot, letting cool air creep in right where the probe sat. A $6 gasket from the hardware store in Waco fixed what I spent close to $200 trying to chase down. Check your probe gaskets before you tear your whole rig apart, has anyone else burned months on a dumb little part like this?
My temp probe gasket went bad on my Old Country last year and I did the same thing, chased it for weeks thinking my firebox was warped. Dabbed some soapy water around the probe port while it was running and saw bubbles sucking in, felt like a idiot. New gasket cost me like 4 bucks at the Ace down the road.
