Bought a $220 offset smoker and it taught me a lesson about temp control
I picked up a cheap offset from academy sports last month thinking I could manage the fire easy. Turns out making thin blue smoke is WAY harder than the youtube guys make it look. My brisket came out like shoe leather after 14 hours of fighting the temperature swings. Anyone else start with a bargain smoker and regret it?
