My grandma told me to stop kneading my dough so much and I fought her on it for 2 years
She baked bread in her kitchen in Toledo for 50 years and always said I was beating the life out of my dough. I ignored her and kept kneading for 12 minutes every time because that's what a YouTube video told me. Last Saturday I finally tried her way, just 4 minutes and then let it rest, and the crumb came out so much lighter I almost felt bad. She was right and I wasted 2 years making bricks. Anyone else stubborn about a step until someone proves you wrong?
How long are you letting it rest after that 4 minute knead? That's the part that got me. I used to knead forever because I thought that was what made gluten, but really the dough just needs time to sit and do its own thing. Try 4 minutes of kneading, then cover it and walk away for 20 or 30 minutes before you even think about shaping it. That rest does more than 8 extra minutes of your hands ever will. Your grandma figured out what a lot of us take way too long to learn.
