So I tried fermenting a batch of hot sauce with ghost peppers and pineapple for 3 weeks, and it came out tasting like fizzy candy. What gives?

Sounds like you made spicy soda instead of hot sauce. Maybe the pineapple went a bit too wild in there.

Ever think the fizz ruins it? I used to, but this batch changed my mind.
