Left my kimchi jar alone, and now I'm a believer in neglect

I was making kimchi and got busy with life. The jar sat in my pantry for over a month without me touching it. When I opened it, I expected a mess, but it smelled amazing and tasted even better. So now I think maybe we fuss over fermentation too much. Sometimes, leaving it alone is a good way to go.

Since your pantry worked out, what temperature range kept it safe like @robert_gonzalez90 wondered about?

Actually, warmer temps around 70 degrees worked fine for mine.

Worry leaving mine alone that long would grow mold. Had it happen once when my kitchen got too warm. What temp was your pantry at?
