Spent a weekend at a sushi joint in Portland and watched the chef sharpen his knife on a ceramic mug

He said the rough bottom edge works just as good as a whetstone when you are in a rush, has anyone else tried that trick with their own knives?

That's actually a pretty common trick in the kitchen world... I've done it myself a few times when I needed a quick touch up on a blade. The ceramic ring at the bottom of a mug is just fine for putting a fresh edge on a knife that's been banged around. You just gotta be careful not to overdo it or you'll mess up the angle. And it's way easier than dragging out the whetstone setup for a quick fix.

Three times I've done this and three times I ended up with a sharper knife but a mug with a giant scratch right in the middle of the ceramic ring. Guess my hand-eye coordination is about as good as my ability to follow a straight line on a coloring page. Still worth it for that quick edge before dicing onions though, as long as you don't look too close at the mug afterwards.
