Sous chef told me my knife work was too slow

She said I was trying to do everything with a chef's knife. Switched to a petty knife for small veg and shaved 20 seconds off my prep per batch last week. Anyone else get called out for using the wrong tool?

Oh man, I've been there. My old sous straight up told me I looked like I was fighting a battle with my prep work cause I kept using the chef's knife for everything. Swapped to a petty for trimming and a small paring knife for those pesky little garlic cloves and shallots, cut my prep time by like a third easy. The trick is to have your knives within reach so you're not hunting for the right one when speed matters.

The petty knife swap was a game changer for me too. I keep a magnetic strip right above my board now so I can grab the paring knife without looking when I'm breaking down garlic or trimming green beans. Makes a huge difference when you're in the weeds and every second counts.
