Overheard a line cook say 'a pinch is a measurement' and it got me thinking
Honestly, that kind of lazy talk is how you get inconsistent food. I saw him dump what looked like a full teaspoon into a sauce he was reducing and call it a pinch. How do you guys train new hires to actually measure, especially with spices?

I worked at a place called The Blue Heron where the head chef made us weigh everything, even salt for seasoning water. I thought it was overkill until we had to prep the same soup recipe with three different cooks. All three pots tasted exactly the same. That's when I got it. Now I keep a set of measuring spoons right on my station, no excuses.
