Lost a $200 fryer basket last week because my prep guy didn't dry it after washing
I run a small kitchen in Portland, and last Thursday I walk in to find a brand new fryer basket completely rusted out. My prep guy soaked it overnight in the sink, then threw it back on the fryer without drying it. That basket cost me $200 two weeks ago. Has anyone else dealt with staff ignoring basic equipment care?

The "didn't dry it after washing" part is honestly the issue. You can't just leave a basket soaking overnight and expect it to be fine (the moisture gets trapped in the welds). I've had the same problem with my guys thinking "soaking" means "let it sit forever" instead of a quick scrub. It's annoying when they don't treat expensive gear like the investment it is.

My buddy Mike had the exact same problem with a high-end fillet knife last summer. He left it soaking in the sink overnight after cleaning fish, and by morning the handle had that same white residue you're describing from moisture trapped under the ferrule. Took him a week of oiling and sanding to get it back to normal, and he still grumbles about that mistake every time we fish together.
