Just realized I was wrong about sous vide for a decade after trying it on a cheap steak in my garage kitchen.

I thought it was just for fancy spots until I cooked a $7 chuck roast for 8 hours and it came out like a $50 cut, so what other old-school technique have you guys tried that actually got better with new tech?

Remember when I thought air fryers were just for reheating fries? My old toaster oven felt betrayed after I made a whole roast chicken in the new gadget. It's wild how these tools we wrote off as fads actually nail the basics better than our old gear. What's the next kitchen gadget I should stop being a snob about?

Oh man, I was the same way about pressure cookers. My grandma had one of those scary old school ones that hissed and I swore I'd never touch it. Got a modern electric one on a whim and it makes beans from dry in like an hour, no soaking. Totally changed my mind on that piece of tech.
