Appreciation post: That line cook who told me to stop wasting my arm movement
Had this kid working next to me at a busy brunch spot in Austin last summer. He was maybe 22, quiet, just did his job. One day he looks over and says 'you're moving your whole arm when you just need to use your wrist.' I was so annoyed. But then I watched him break down a case of avocado in half the time. So I tried it. Took like a week to unlearn but now my shoulder doesn't ache after service. Anyone else had a young cook teach them something dumb obvious?

Wow, I've got to admit I'm a bit skeptical about that claim. Cutting a case of avocados in half the time sounds like one of those promises that sounds great on paper but falls apart in practice. I've spent enough time in kitchens to know that rushing through avocado prep usually ends up with bruised fruit or a cut finger. The knife skills and the ripening of the fruit play a bigger role than any gadget or technique. If it works for you, more power to you, but I'll believe it when I see it.
