Met a guy at Baker Lake who showed me how to cook trout on a flat rock
I was struggling to get a fire going last summer at Baker Lake when this older guy walked over and showed me how to heat a flat basalt rock to cook fish without a pan. He said the rock holds heat way longer than metal and you don't need to scrub anything. Has anyone else tried cooking directly on rocks like that?

One time up at Diablo Lake I used a hot slate like that and the trout skin came out perfectly crispy.

and I was reading this thing about how the Maillard reaction works way better on a surface that's already been used a few times, like that slate builds up a tiny layer of oil over time. something about the texture being more even for heat transfer, so you get that crackle without burning the inside. I tried it on a cast iron pan with some rainbow trout last weekend and it was legit the best crispy skin I've managed at home, no lie.
