Walked into a hipster butcher shop over the weekend and walked right back out

Went to this new place in Portland called something like "The Honest Bone" or whatever. They had like 6 different cuts of beef on display, all dry aged for 60 days, and the smallest one was $85. I asked the kid behind the counter if they had any basic chuck or sirloin and he looked at me like I asked him to butcher a unicorn. They didnt even have a bandsaw in the back, just some little hand saws. Has anyone else dealt with these fancy shops that charge triple for a steak but cant sell you a normal roast?

Also no bandsaw? How do they even break down a primal back there? Sound like a total joke.

Heard the owner in an interview say they use a handsaw and a cleaver for everything. Claimed it gives them more control than a bandsaw ever could. Seems like a lot of extra work to me but maybe they just don't have the space for one.
