TIL the USDA says a 'Prime' grade steer yields about 650 pounds of trimmed beef

Read it in an old extension pamphlet from the 90s I found at a farm auction. That's a LOT more than I was cutting as a new guy, makes me wonder how much better our yield is now with modern methods?

@linda_kelly17 must be feeding those cows gold coins if they're gaining a hundred pounds like that.

My buddy's first steer only gave him 480 pounds of trimmed meat.
