Started trimming whole primals 6 months ago and I'm still not sure if it's worth it
I switched from buying boxed subprimals to whole primals back in November because my supplier in Grand Rapids cut me a deal at $2.89 a pound on whole beef. The first few weeks were rough, I lost maybe 15 percent to trim and my yield was all over the place. But now that I've got my knife work dialed in, I'm saving about $80 a week and the trim goes straight into my ground. My old boss says I'm wasting time on labor that I could spend selling, and honestly some days I think he's right. Any of you run the numbers on whole primals versus boxed, or am I just fooling myself?
