Showerthought: I used to break down a whole side by feel, now I check the scale every 20 pounds
When I started at the shop on 9th Street back in 2004, I could break a side of beef by eye and hit my yield within a couple pounds. Now I keep a digital scale right on the block and check it every 20 pounds or so, mostly because our burger accounts want the trim weights dead on and I got tired of guessing wrong on 40 pound batches. Does anyone else weigh way more than they used to, or am I just getting slow in my old age?
