Seeing traditional butchery in rural Japan made me appreciate the old ways we've mostly moved past.

Honestly, it felt like stepping back to when I was just starting out.

Listen to spencer707 on the temperature thing... it's a real gamble with summer heat. I've had a box show up warm and it just ruins everything. Not worth the risk if you ask me.

Have you read about the temperature problems with online meat orders? I saw a piece last week (on a food safety site) that said delivery trucks often aren't kept cold enough, which is a big issue in summer. That can ruin the meat before it even gets to you. I know a guy who got sick from bad chicken left on his porch too long. So while it's easy to order online, the quality might not be sure. Makes me think twice about relying on it.
