My kid asked why we don't keep the pigs whole anymore

I was breaking down a shoulder last night and my daughter, she's ten, was watching. She just looked up and said, 'Dad, why do we cut them all up first? Why don't we just sell the whole animal like they show in my farm book?' I froze for a second. It hit me that in my shop, we've been so focused on case-ready cuts for years that we lost the whole picture. I'm thinking maybe we should try offering a whole hog option for the holidays this year. Has anyone else brought back whole animal sales and had it work out?

Honestly sounds like a lot of extra work for maybe a few sales. I mean, where are people even gonna put a whole hog? Most folks don't have the freezer space or the know-how to deal with that. Maybe it's just me, but it feels like chasing a trend that already passed.

My cousin in Austin split a whole hog with three other families last month. They got a local butcher to break it down and everyone saved a ton on meat for months. Maybe the trend is just getting started in some places?
