Hot take: I thought dry aging at home was just a fancy trend for rich guys.
Tried it in a small fridge for 28 days on a rib section, and the flavor was way deeper than anything I get from the regular cooler. Anyone have a good source for those specific humidity controllers?

That "fancy trend" just turned your fridge into a flavor lab. I grabbed my Inkbird controller off Amazon for like forty bucks. Works fine, but now my garage smells like a steakhouse basement.

Totally get the "fancy trend" idea, it seemed so extra to me at first too. My wife rolled her eyes so hard when I set up a mini fridge in the basement just for this. That funk after a few weeks is REAL, but man, the taste is just on another level. Found a basic humidity controller at a local restaurant supply store that did the trick without breaking the bank.

My husband still won't go in the garage since my 35-day brisket experiment. That smell really does stick around.
