You see this everywhere, like old diner cooks who still use cast iron when flat tops would be faster, or my grandma balancing her checkbook by hand. Sometimes the way you learned something just sticks, and switching feels wrong even if it's messier. It's not always about what works better on paper, no pun intended lol.

Seriously @elliotbell, the MESS is part of the process for some people. It creates a physical record you can't just close a tab on, which honestly works better for focus. That tactile feel is worth the cleanup time.
