After 15 years in the trade, I still hand-wrap my cuts in paper instead of vacuum sealing.

Honestly that makes total sense to me, and elliotbell's shock is kinda the point. You see this everywhere, like old diner cooks who still use cast iron when flat tops would be faster, or my grandma balancing her checkbook by hand. Sometimes the way you learned something just sticks, and switching feels wrong even if it's messier. It's not always about what works better on paper, no pun intended lol.

Wait, you're telling me after 15 whole years you still use paper? What's the actual reason, just muscle memory or does it honestly work better for you somehow? I'm shocked the mess and extra time hasn't driven you to buy a cheap sealer yet. That's some serious dedication to the old way.

Seriously @elliotbell, the MESS is part of the process for some people. It creates a physical record you can't just close a tab on, which honestly works better for focus. That tactile feel is worth the cleanup time.
