A retired butcher in Boise said to skip the saw on pork shoulder, and he was spot on

I was breaking down a whole hog last month and got to the shoulders. This old guy I know, who ran a shop here in town for forty years, always said to use just a boning knife and follow the seams, no saw needed. I gave it a shot, and after about twenty minutes of careful work, the bone popped right out clean. The meat was way less torn up than when I used to cut through the bone. Has anyone else had better luck with certain cuts by ditching the saw completely?

Honestly, that trick works great on lamb shoulder too.

You mentioned the bone popped out clean. Was there a specific seam that gave way first, or did you have to work them all evenly?
