My neighbor pointed out I was wasting half a cabbage by not using the core in my soup, and now I never toss it.

She said 'it's all edible if you chop it fine,' and after trying it, I've saved about $2 a week just on that one change, so what other veggie scraps do you all use that most people throw away?

That "chop it fine" advice is a game changer. I used to toss broccoli stems until I realized you can peel the tough outside and grate the inside for slaw (it's way cheaper than buying the florets). Carrot tops are also weirdly good in pesto instead of basil, if you don't mind a slightly earthier taste.

Potato peels get super crispy when you roast them with a little oil. Onion skins add great color to homemade stock.
