Update: Watching a pitmaster in Memphis handle a brisket stall with just a spray bottle and patience.

He didn't wrap it or crank the heat, just kept a steady mist going for over 2 hours until it powered through, which made me ditch my crutch of butcher paper for my last 3 cooks.

That "spray bottle and patience" method reminds me of an old Aaron Franklin quote about trusting the process.
