That $150 ceramic brisket plate from the BBQ shop turned out to be a total waste

I bought one of those fancy ceramic brisket plates to put under my meat while it rested, and after three smokes it cracked right down the middle from the heat, so has anyone tried the basic aluminum hotel pans instead and do they hold up better?

I switched to basic aluminum pans and never looked back honestly.

I hear you on that. "Never looked back" is exactly how I feel too. I spent years buying expensive nonstick pans and replacing them every time the coating started peeling. It was such a waste of money and honestly kind of frustrating. Simple aluminum pans are sturdy, they heat up evenly, and I don't have to baby them or worry about scratching them. I think a lot of us got tricked into thinking we needed fancy cookware when the basic stuff works just fine.
