That fancy sourdough starter guide was completely wrong for me

I followed a popular blog's method for 3 weeks and got nothing but grey sludge. Switched to a 50/50 rye and water ratio just keeping it on the counter and had bubbles in 4 days. Has anyone else had a "pro" recipe totally backfire like that?

Tried that famous "no knead" bread recipe everyone raves about and ended up with a doorstop. My dog wouldn't even eat it. Now I just mix flour and water by feel and it works way better.

Funny how that works. You follow the recipe exactly and get a brick, then you throw caution to the wind and accidentally make decent bread. That no knead thing went viral for a reason but its like the timing or humidity or phase of the moon has to be perfect or you end up with a hockey puck. My best loaf came from a hazy morning where I forgot half the salt and just eyeballed the water until the dough felt right. Your dog probably knew it was a lost cause before you did. Honestly the arrogant confidence of just mixing flour and water by feel is the real secret.
