PSA: I thought letting bread dough sit overnight was just a waste of time.

My recipe said to leave it in the fridge for 12 hours, so I tried it last night with some doubt. Pulled it out this morning and the dough was bubbly and smelled amazing, way better than my usual 2-hour rise. The loaf I baked had a crust and flavor I've never gotten before. Anyone else have a simple step they thought was pointless that actually changed the game?

Wasn't there a study about how sleep helps clear out junk in your brain? I read something about it making connections between ideas stronger overnight. Like you go to bed stuck on a problem and wake up just knowing the answer. It's not just feeling rested, it's like your brain actually fixed things while you were out. That's the real magic part.
