My aunt told me to chill my cookie dough for 24 hours
She insisted it would make a huge difference, so I tried it with a batch of chocolate chip cookies last Saturday. The texture was way better, less spread and a deeper flavor, but I nearly forgot about them because it took so long. Has anyone else found that an overnight rest works for other types of dough, like sugar cookies or shortbread?

Man, I used to be totally in the "just bake em right away" camp. Thought chilling dough was overhyped and a waste of time. But after trying it myself with chocolate chip cookies, I gotta admit I was wrong. The texture really is better and that flavor depth is real. Have you tried it with a simple sugar cookie dough yet?

Oh great, another convert to the Church of Chilled Dough. Welcome, we have cookies. The sugar cookie thing is actually kinda funny, I tried it once and my dough turned into a solid brick in the fridge, had to let it sit out for half an hour just to scoop it. Totally worth it though, they came out way less flat than usual. Maybe I just needed to chill my expectations along with the dough.
