Back in the day, making proper crispy wings involved preheating the oven, rotating trays, and a solid 45 minutes of waiting. You'd hover by the stove, hoping they didn't burn. So, has Chris checked if his oven actually heats to the right temperature? Mine was running way too hot and it TORCHED my cookies until I used a cheap oven thermometer. Those heating elements can wear out and create insane hot spots, like the back left corner becoming a pizza cremator. If his rack was too high or the batch was too close to the top, that's a guaranteed burn. Some ovens just need a professional calibration, especially if they're older. It's a simple fix but most people never even think about it.

Learned to pat the wings completely dry with paper towels first. Toss them in a little cornstarch with the seasoning before they go in the air fryer. That extra step gives them a crazy crispy skin without any risk of burning, in my experience.
