My local coffee shop switched to all vegan pastries and no one even blinked
I went in last week and saw the usual croissants were gone, replaced with almond butter swirls and chia seed muffins. It hit me that vegan baking has become so normal here that the change didn't cause a stir. A few years back, asking for a vegan cookie would get you a weird look. Now, the barista said their new supplier focuses on plant based goods because demand shot up. I think this means more people are trying vegan recipes at home too. My own go to banana bread recipe gets asked for constantly now. It's cool to see how everyday food spots are just making the switch without a big deal.

You know, I used to pick those swirls thinking they were a better choice. But hearing about the honey in the filling really opened my eyes. Like, if it's got hidden honey, that's just extra sugar. Wesley's point about almond butter swirls having more sugar than croissants makes sense now. I guess I was fooled by the 'swirl' name, thinking it was mostly nuts. Now I'll definitely check the ingredients more closely.
