That comment from a barista at Blue Bottle changed my whole pour-over method
I was at Blue Bottle in Portland last fall, showing off my V60 technique, and the barista just said 'your water temp is too low for that roast.' I thought 195 was fine, but he showed me their thermometer reading 205 and the flavor difference was night and day. I switched to a gooseneck kettle with a digital readout and started timing my pours. Has anyone else had a barista call them out on something that simple?

Yeah I was a temperature snob too until that same thing happened to me.

Dude, my buddy Mark was the same way. He would only drink water if it was exactly 38 degrees, he had a whole thermometer thing for his fridge. Then one day his fancy filter broke and he had to drink tap water at room temp after mowing the lawn in July. Now he chugs lukewarm water from a hose like it's nothing, doesn't even care if there's a little floaty in it. Ever see someone go full circle like that?
