Stopped rinsing my rice 8 times, one soak in cold water fixed my sticky rice
For 6 years I stood at the sink rinsing jasmine rice until the water ran clear, like my first head chef at a spot in Austin drilled into me. Now I just cover it with cold water for 20 minutes, drain it once, and steam it. Same fluffy grains, way less time on my feet during service. Anybody else ditch the rinse ritual, or am I the only one who was wasting all that time?
