Spent $200 on a commercial slicer for my food truck, regretted it immediately
Bought a used Hobart slicer off Craigslist for $200 last month. The blade was dull and the carriage kept sticking, wasted three pounds of brisket before I gave up. Anyone have luck fixing these things yourself or is it always a shop job?

Yeah I was kinda in the same boat honestly. Always figured a used slicer was a gamble but that $200 price tag was too tempting. But reading what you said about the blade swap being the real fix, that actually makes a lot of sense. I spent two hours trying to sharpen a dull blade with a stone and it still tore up the meat. Next time I see a cheap slicer I'll just budget for a new blade right off the bat instead of trying to save a few bucks.

Man that "blade was dull" part hit close to home. I bought a similar used slicer a while back and yeah, it's a pain when you just want to get going on prep. For the blade, I actually had decent luck with a sharpening stone and some patience (took like an hour and a lot of cussing). The sticking carriage though, that's usually just dried up grease or old food gunk in the slide rails, you can clean that out with some degreaser and a wire brush. But here's the thing, I ended up dropping another $50 on a new blade from a restaurant supply website and that alone made it work way better than trying to fix the old one. If your blade is really bad, sometimes it's just not worth the headache to sharpen it yourself, you know?
