I just realized I've been sharpening my knives wrong for ten years

A new prep cook in my kitchen in Austin watched me run my chef's knife over a steel and quietly said, 'Your angle is way too steep, chef.' I tried his method, holding it at almost 15 degrees, and the edge was instantly better. How did you finally learn the right way to maintain your blades?

Honestly, I learned the right angle from a YouTube video (after years of doing it wrong).

YouTube is such a game changer for that stuff. I finally learned how to properly chop an onion from a video last year, after mangling them my whole life. It's wild how many little skills we just guess at. Now I search for a quick tutorial on everything, like how to fold a fitted sheet or tie a secure knot. Saves so much frustration.
