Garlic lost its punch after I started buying pre-peeled cloves

I switched to pre-peeled garlic for a busy weekend service about 2 months ago, and my sauces suddenly tasted flat. Turns out the cloves lose a bunch of oil and flavor once they're peeled and sitting in those bags. Anyone else notice this, or am I just being picky about my mince?

Thirty bucks a pound for flavorless garlic is basically the industry's biggest scam. I peeled my own for a catering gig last week and the difference was night and day, the pre-peeled stuff smelled like nothing but plastic. I honestly think those bags are just steamed or washed somehow, which kills all the allicin before it ever hits your pan. Maybe it's just me, but flat garlic is like cooking with a wet sock, you know it's there but it adds zero joy. You're not being picky, you're just the only one paying attention.
