TIL I was ruining my knife edge by using a steel wrong for 2 years
Been a butcher for about 5 years and just learned from an old timer at a shop in Austin that I was dragging the blade at the wrong angle the whole time. How long did it take you guys to figure out proper steel technique?

Took me about three years and a lot of nasty comments from my grandpa before I figured out I was basically just making the blade duller, not sharper. (Got a lot of "you're gonna kill yourself with that thing" lectures, oops.)

@tarak17 learning to sharpen was a whole thing for me too. My old man just handed me a $20 stone and said "don't mess up the edge" like that was supposed to mean something.
